William Howard Stein was an American biochemist who won the Nobel Prize in Chemistry in 1972 for his work on the pancreatic enzyme ribonuclease. Stein, together with Moore, investigated the link between its chemical structure and the catalytic activity of the active center of the ribonuclease molecule. Between 1949 and 1963, they developed methods for the analysis of amino acids and peptides derived from proteins, determined the structure of ribonuclease, and catalyzed the digestion of food. By 1972, they also developed the full sequence of deoxyribonuclease, a molecule twice as complex than ribonuclease.
